soup philosophy
In the café where I work, one of the cooks duties are to prepare fresh soup daily. The requirements are: Vegan and Gluten Free.
I like the ritual of going to the store room, seeing what is available, and making a flavoursome veggie soup out of it. I never use stock in the soups and very occasionally tins.
These ‘behind the scenes’ photos, taken in the morning while preparing the soup, are a celebration of abundance and the vegetables themselves. And working with a sharp knife!
